Girl Scout Dessert Bake-Off!

Savannah Smiles Lemon Blueberry Parfait
Ingredients
One small pkg (3.4 or 3.5) instant lemon pudding and pie filling
1 1/2 cups whipped topping, divided
2 cups cold milk
1/2 cup fresh blueberries
3/4 pkg (about 21) Savannah Smiles lemon cookies.  Leave 8 or 9 whole cookies to decorate desserts with and xrush the remaining 12 cookies into cookie crumbs
Directions:
1. Prepare lemon pudding as directed: With a whisk or electric mixer, blend together the pudding mix and 2 cups of milk, on low speed for about 2 minutes.  Let set for 5 minutes.
2.In a separate bowl, stir together with a spoon, 1 cup pudding and 1/2 cup whipped topping.
3.  Using 2 to 4 clear dessert cups, layer the ingredients into each cup as follows:
a. Lemon pudding
b. Cookie Crumbs
c. Pudding/Whipped topping mixture
d. Blueberries
e. Lemon Pudding
f. Cookie crumbs
g. Pudding/whipped topping mixture
h. Blueberries
i.Whipped topiing
j. top with a blueberry and cookie crumbs
k.  just before servin, insert 2 or 3 whole cookies near the edges
Refridgerate until ready to serve
Note: Recipe makes 2 to 4 servings, depending on the size of your dessert cups.  Clear stemmed glasses, such as wine glasses, make for a graet presentation.

Thin Mint Brownies
    4 oz (1 stick) unsalted butter
    2/3 cup (4 oz) semisweet chocolate chips plus 1/4 cup (1 1/2 oz) semisweet chocolate chips (divided use)
    1 1/2 ounces unsweetened chocolate, chopped
    1 large egg plus 2 tablespoons lightly beaten egg
    1 teaspoon pure vanilla extract
    1/2 cup plus 1 tablespoon granulated sugar
    1/4 cup plus 1 tablespoon all-purpose flour (1.15 oz)
    3/4 teaspoon baking powder
    1/2 teaspoon salt
    8 Thin Mint Cookies (if you don’t have Girl Scout Cookies, try another mint flavored cookie)
    Preheat the oven to 350 degrees F and line an 8 inch square metal pan with foil. Spray bottom with cooking spray.
    Melt the butter in a microwave-safe bowl. Add chocolate chips and unsweetened chocolate to hot melted butter and stir well. Microwave on high for 30 seconds. Stir. Repeat until chocolate is melted. Set aside to cool slightly.
    In a mixing bowl, lightly whisk together the eggs, vanilla and sugar. Stir the cooled-yet-still-slightly-warm chocolate mixture into the egg mixture and cool to room temperature (this is important, otherwise when you add the chocolate chips they’ll melt and change the texture).
    Mix together flour, baking powder, and salt. Add to the cooled chocolate mixture.
    Chop the Thin Mints roughly into quarters (you can make them smaller if you want). Add the Thin Mints and the remaining 1/4 cup chocolate chips to the batter. It should be fairly thick. Spread it in the pan and bake on center rack for 18 minutes. Remove from oven and wrap pan on the counter to bring air bubbles to the top (makes a denser brownie). Return to oven and bake for another 8 or 9 minutes for a total bake-time 26-27 minutes.
    Let cool to room temperature and then chill thoroughly. Lift from pan, set on a cutting board and cut into 16 squares.

Girl Scout Cookie Fudge
Ingredients
    12 ounces high quality milk chocolate chips
    1 14 ounce can sweetened condensed milk
    10 Girl Scout Cookies (any flavor), divided and coarsely chopped
    1 Tablespoon vanilla
    1 Tablespoon butter, softened (for the foil)
Instructions
    Line an 8 inch square pan with foil, with ends of foil extending over sides. Lightly butter foil.
    In a small saucepan over medium low heat, melt the milk chocolate and sweetened condensed milk. Stir continuously.
    Once melted, remove from heat and stir in vanilla and 8 of the coarsely chopped Girl Scout cookies.
    Spread into prepared pan. Top with remaining chopped Girl Scout Cookies.
    Refrigerate for 2 hours.
    Use foil handles to lift fudge from the pan. Remove foil and cut into 1 x 1 inch square pieces.

Do Si Do Cookie Cupcakes
Prep Time: 15 minutes
Cook Time: 19 minutes
Yield: Makes 24 cupcakes
Vanilla cupcakes with a Do Si Do Girl Scout Cookie in the bottom and topped with a Peanut Butter Frosting.
Ingredients
1 white cake mix (18 oz.)
24 Do Si Do Girl Scout Cookies
Peanut Butter Butter Cream
1 c. butter, softened
1/2 c. peanut butter
2 tbsp. water
2-4 tbsp. honey
1 tsp. vanilla
1/8 tsp. salt
4 c. powdered sugar
Instructions
    Preheat oven to 350* Place liners in cupcake pan. Mix up the cake mix according to the directions on the box.
    Put 2 tbsp. of batter in the liner. Set a cookie on top and then finish filling the liner with batter. Fill it at least 3/4 of the way full. Bake 19 minutes. Let cool.
    While the cupcakes are cooling, make frosting. Cream butter and peanut butter. Add the water, salt, and vanilla and cream again. Slowly add the powdered sugar. Beat in the honey until creamy. If the frosting is thick, you can beat another tablespoon or two of water into the frosting.Girl Scout Dessert Bake-Off!
